egg fried rice

About the Recipe

quick and easy dinner, for the days you just cant get yourself to cook.

Ingredients

2 c. rice (washed)

3 c. water

1 1/2 tbs salt

3 tbs soy sauce

1 tbs Worcestershire sauce

2 tsp black pepper

2 tsp chilli powder ( adjust to taste)

2 tsp asian five spice

1 1/2 cups frozen mixed veggies

400g mushroom

4 eggs

Preparation

  1. Cook the rice by adding the rice, water, and half a teaspoon of salt into a pot on medium high heat, allow it to come to a boil before reducing heat and covering with a lid.

  2. While the rice is cooking, scramble the eggs in a well oiled pan. Tip; don't season the eggs before cooking, as they will turn grey. Set the cooked eggs aside.

  3. To the same pan, add more oil along with the veggies and mushroom along with half of the soy sauce, half the worcestershire sauce and the spices.

  4. Add some water to the pan and cover with a lid to steam cook the veggies.

  5. After the veggies are fully cooked add the eggs to the pot, along with the cooked rice and the rest of the soy and worcestershire sauce 

  6. Mix well and enjoy.
